Yield: 12 crostini
1 small French baguette
2 TBS butter, softened
8 oz whole-milk ricotta cheese
2 tsp confectioner’s sugar
12 oz fresh cherries, pitted and chopped
¼ cup OMG! Dark Chocolate Barrel Aged Balsamic Vinegar
Preheat the oven’s broiler.
Slice the baguette on the bias, producing 12 half-inch thick slices. Lightly butter both side of the bread. Place the bread buttered-side up on a baking sheet. Place under the broiler, watching closely, until the bread is crisp and the tops become golden brown. Flip the bread to toast the other side. Set aside to cool completely.
While the bread cools, whisk together the ricotta, confectioner’s sugar, and salt.
Spread each toasted slice of bread evenly with ricotta. Top evenly with cherries and drizzle with about 1 teaspoon dark chocolate balsamic vinegar on each crostini. Serve immediately.
